@TheOldenson,

The IOS simulator is very GPU dependant and I have seen a number of similar reports to yours when running the IOS simulator on systems with legacy dGPU ....

Not sure if there is a fix for it other than updating your dGPU to something like Radeon RX 580 or Vega.
