One curious thing is my GPU is Sapphire Pulse Radeon RX580 but Big Sur says it's Polaris RX580.
And I followed your video but when I build kext, it says signature is invalid

Is this a pulse “2048sp” ? They have an incompatible vbios.

I thought I could possibly resolve issue by using fake ID coz the device ID is same

By following OpenCore GPU Spoof, I changed device ID as 0x6fdf but it still doesnt recognize GPU

It's my AMD device and flashed it to 570. But seems vbios is damaged by upgrading 570
