Did you check to see if your 970 EVO Plus has the latest firmware as per this thread's topic?

It's really easy to do with Windows and Samsung Magician software.

It looks like the last couple 970 EVO Plus's I've acquired already have the latest firmware on them - has that been the case for anyone else?

I got mine early this month already with lastest firmware, no need to upgrade, already running catalina on it as smooth as it should be
 
I checked the firmware and it is updated to the latest version (2B2QEXM7) but it doesn't work the same.

What do you advise me to do?

I disabled the 'put hard disks to sleep when possible' option in System Preferences and now it works flawlessly.

I bought the 970 EVO. It came with the new firmware already installed, and it was unexpectedly rebooting. But, then I did what @kraetos10 said, System preferences->energy saver->disable 'put hard disks to sleep when possible'. The 970 EVO now works without problems.
