Ryzen 5 3600 | Gigabyte B550 Gaming X MB

Have adopted the above and was wondering if anyone could comment on compatibility OR a build thread to investigate.

You need a supported AMD graphics card if you want to install and run MacOS on this hardware. Like the RX 560 / RX 570 / RX 580 (second hand only) or RX 6600 (might still be available new, at my location at least).

Do you have such a card?

Take a look at @CaseySJ Golden Build thread, you will need to change Core Count in the config.plist to match your 3600. But like @Jamesbond007 says, you'll need a compatible GPU 1st.

 
I have an older R280X (as per below build) which has worked over multiple OSX builds over the decade. Too old?
That's a really good question that unfortunately I would have to refer to someone else to answer. You got a PCIe x 4 MB, I would look into either a Ryzen with iGPU or a GPU that's PCIe x 4 compatible.
 
I wasn't aware that this CPU didn't have integrated graphics as it a "hand me down" from my son.

I can still get a new Gigabyte RX 6600 (no XT) Eagle where I live new for approx $300. The Gigabyte RX6600 GT is listed as recommended.

In the end this will be a "hobby hack" as I moved back to Apple silicon for my main machine. I just want to try something different.

EDIT - I'll start with the RX280X and see if I get anywhere unless someone says I am wasting my time.

According to the OpenCore GPU buyers guide :

The R9 280X is "hit or miss", meaning it may or may not work. Note also that the guide says the highest supported MacOS is MacOS Monterey, so if you are trying to install MacOS Ventura or later, you may be wasting your time if you try to use the R9 280X.

A RX 6600 will be much better as it is supported on MacOS Monterey and later, including the latest Sequoia.

There is one thing I forgot to mention : Your i7 3770K CPU lacks the crucial AVX2 instructions which are required for using supported AMD graphics cards on MacOS Ventura and later.

The furthest you can go (without resorting to hacks like OCLP) is MacOS Monterey, and then only when you have a supported AMD graphics card.
