The Build
My goals was to build an affordable Final Cut Pro editing machine. I only edit 1080P in ProRes, so my requirements are not that huge. I also wanted future upgradability so that if I have to or want to edit 4K natively I could upgrade in the future.
Everything went pretty easy albeit two problems: The cooler interfered with the rear case fan. I removed that. Even then it was still a bit to low, so it hit the I/O shield. I moved the rear fan on the cooler up a bit to solve this problem.
The second was pretty silly, the case fan header was right underneath the cpu cooler making it very unpractical to get it connected. The cable for the intake fan was also pretty short so I had to remove the board again and fiddle it in.
The Motherboard
I chose this board because I wanted a relatively budget but also compact build. Prices in The Netherlands were good for this mATX board. And it was mentioned in the buyers guide. My first build was also a Gigabyte board so the familiarity was nice.
CPU
I chose the 8350K because of it's price. A 8400 with an H motherboard would have been a cheaper and maybe faster option, but I wanted the Z motherboard for future upgradability and overclocking.
GPU
The RX580 seems to be a very solid choice in terms of Final Cut preformance and hassle free Mojave compatibly. Price is good at the moment.
RAM
Max Yuryev mentioned that 16GB is fine for Final Cut Pro, so I chose that as my minimum. I went for motherboard compatibility and price here.
The installation

I followed the Mojave install guide.
Made the USB drive with UniBeast.
Encountered one problem: In Mojave the partition scheme drop down is gone, you have to click view>all devices in order to select the upper most part of the USB drive and then you'll see the partition scheme again. Went you don't do this it will select Master Boot and that does not work. Wouldn't boot from the USB.
I used the uppermost USB 2.0 ports at the back.
Installation went fine. I selected the following MultiBeast settings:

It wasn't booting right after MultiBeast. I got stuck at the Apple logo loading bar at 2/3. Screen went dark grey.
Changed the booting order in the BIOS. It was set to P0: Samsung SSD 840 EVO 250GB, changed it to UEFI OS (P0:Samsung SSD 840 EVO 250). In both cases I got to the Clover page and the Apple logo, but only the UEFI one booted correctly.
