Get four ACHI 256GB or 512GB and the carrier board and you're good to go. Fast as you can get on a Mac (for now).

I'm only getting 140mb/s write speeds with my Kingston HyperX SH100S3/120G 2.5" 120GB SATA III MLC Internal Solid State Drive (SSD)

It should go up to 400-500. I wonder what I need to do. Drivers probably. Sigh. Time to break things.

Spec show 120 MB/s max sequential writes so you are doing better than spec. Writes are 420 MB/s spec.
