Intel i7-6700K
Graphics
nVidia GeForce GTX 1070
[Update: Bolded items have been purchased at the listed price (including shipping + any rebates).]

[Update: Yet another reversal. The plan is now to go back to Skylake. After doing some more research on Kaby Lake vs. Skylake, it seems like it makes sense to stick with Skylake for a few reasons. First, it's native. Second, it retains Microsoft's native support of Windows 7 through 2020. Third, Kaby Lake is not a performance increase for anything I'd use my computer for. I do plan to slot the Skylake CPU in a Z270 MOBO, however.]

The goal is a future-proof gaming rig of fairly high power. A dual-boot option is planned, with one SSD running Windows and one SSD running OS X. So this is definitely intended to be a Hackintosh. I don't need maximum FPS in current super-high-end games, but I do aim to run older games (e.g., WoW or DDO) at decent FPS. We're maxxing it out, baby (within sane limits)!

Case ($71): Phanteks Enthoo Pro Series PH-ES614P_TG Titanium Green Steel / Plastic ATX Full Tower Computer Case

Power Supply ($115): EVGA Supernova 850 W Gold G3 Series PC Power Supply Unit
-Planned for future-proofing. (Will probably eventually run in SLI.)

Motherboard ($139): ASUS TUF Z270 Mark 2 LGA1151 DDR4 HDMI DVI M.2 USB 3.1 Z270 ATX Motherboard
-This will be swapped for an ASUS TUF Z270 MARK 1. The Mark 2 is *not* ATX. Also, the Mark 2 I received has bad DIMMS.

Graphics Card ($419): GIGABYTE GeForce GTX 1070 DirectX 12 GV-N1070G1 GAMING-8GD 8GB 256-Bit GDDR5 PCI Express 3.0 x16 SLI Support ATX Video Card
-This is the compromise between power and price I have settled upon.

Processor ($326): Intel Core i7 6700K 4.00 GHz Unlocked Quad Core Skylake Desktop Processor, Socket LGA 1151 [BX80662I76700K]

RAM ($206): CORSAIR Vengeance RGB 16GB (2 x 8GB) DDR4 3466 (PC4 27700) C16 Intel 100/200 Series PC Memory CMR16GX4M2C3466C16
-A couple more dollars for pretty lights? Yes please.

SSD Storage:

($128): Samsung 960 EVO Series - 250GB PCIe NVMe - M.2 Internal SSD (MZ-V6E250BW)
-Windows will be installed here.

($108): Samsung 850 EVO 2.5" 250GB SATA III 3-D Vertical Internal Solid State Drive (SSD) MZ-75E250B/AM
-OS X will be installed here.

Spinning Disk Storage ($130): VelociRaptor WD1000CHTZ 1 TB 2.5" Internal Hard Drive
-For use with OS X only.

Wi-Fi ($49.69): Fenvi FV-T919 802.11AC A/B/G/N/AC BT 4.0

Optical Drive ($50): LG Electronics 14x SATA Blu-ray Internal Rewriter without Software, Black Model WH14NS40 - OEM

Cooler ($80): Noctua D-Type Premium CPU Cooler, NF-A15 PWM Fans, Retail Cooling NH-D15S

Current Total: $1700-ish

Have I missed something? Overlooked a better option? Does this achieve my goals? Am I Hackintosh compatible? Any advice or help would be greatly appreciated.

Should be good, the components haven´t effect on mac OS.

Motherboard ($150): ASUS PRIME Z270-A LGA1151 DDR4 DP HDMI DVI M.2 USB 3.1 Z270 ATX Motherboard
Also should work fine, ethernet is Intel® I219V, read here how you can get it working: https://www.tonymacx86.com/threads/...ylake-100-series-motherboards-testing.180995/
Audio chipset is Realtek ALC S1220A, read here about the compatibility of the audio chipset: https://www.tonymacx86.com/threads/realtek-alc1220-s1220a-owner-thread.213617/

Graphics Card ($250): ASUS GeForce GTX 1060 6GB Dual-fan OC Edition VR Ready Dual HDMI DP 1.4 Gaming Graphics Card (DUAL-GTX1060-O6G)
Nvidia Web Drivers for Pascal Card are available here: https://www.tonymacx86.com/nvidia-drivers/

Processor ($350): Intel Core i7 6700K 4.00 GHz Unlocked Quad Core Skylake Desktop Processor
Skylake is natively supported on mac OS, so this CPU will work fine.

RAM ($125): Corsair Vengeance LPX 16GB (2x8GB) DDR4 DRAM 3000MHz C15 Desktop Memory Kit - Black (CMK16GX4M2B3000C15)
Should work with mac OS.

SSD Storage (2x$110 = $220): Samsung 850 EVO 250GB 2.5-Inch SATA III Internal SSD (MZ75E250B/AM)
Work fine with mac OS, I also have the same SSD.

Spinning Disk Storage ($130): VelociRaptor WD1000CHTZ 1 TB 2.5" Internal Hard Drive
Also should work fine.

Thanks HorchaudiBMW. I'm making a few changes to the above which I will record here. One of these changes is a clear no-brainer (the SSD option). The other change is a personal choice (the GPU swap). I particularly welcome suggestions of changes that people think to be no-brainers, but any and all criticism is strongly encouraged!

I'm going to up the GPU. All the way. The current plan is to use an nVidia GeForce GTX 1080 Ti. That's a whopping $450 addition in price, but I consider the upside worth the cost. There are a few options here, notably:

Founder's Edition GPU ($699): EVGA GeForce GTX 1080 Ti FOUNDERS EDITION GAMING, 11GB GDDR5X, LED, DX12 OSD Support (PXOC) Graphic Cards 11G-P4-6390-KR

Or:

Gigabyte Edition GPU ($699): GIGABYTE GeForce GTX 1080 Ti DirectX 12 GV-N108TGAMING OC-11GD 11GB 352-Bit GDDR5X PCI Express 3.0 x16 ATX Video Card

Must I stick with the former, or will the latter work too? If so, it seems nicer (notably, it should run cooler).

The SSD Storage option I selected above is, I think, sub-par. Those SSDs are two years old and use SATA connectors. I'm planning on spending a mere $40 more to swap to:

2x SSDs (2x$130 = $260 TL): SAMSUNG 960 EVO M.2 250GB NVMe PCI-Express 3.0 x4 Internal Solid State Drive (SSD) MZ-V6E250BW

More changes might be incoming. A lot of people seem to prefer Gigabyte MOBOs. I'm particularly interested in folks who might wish to opine on a Gigabyte MOBO vs. my choice of MOBO.

Currently planning on swapping the motherboard to:

ASRock Z170 Extreme7+ LGA 1151 Intel Z170 HDMI SATA 6Gb/s USB 3.1 USB 3.0 ATX Intel Motherboard

The motherboard I originally listed should work, but it doesn't appear on the TonyMac supported list. It also doesn't appear on ASUS's own website. And I didn't like the reviews on NewEgg. I've spent hours combing through Z170 MB reviews, and all of these boards have numerous people reporting them being DOA, but my spidey-sense says that the reviews of this board are good enough to take the plunge on it.

OP updated. Aside from the graphics card update, which is a massive price change, I've made several other minimal price changes for significant power boosts. This will be a living thread until I finalize the build. I'm learning a lot doing all the research required to get this (my first build ever) together!

For Wi-Fi, I'm looking at:

(Wi-Fi: $15): Fenvi Wireless Network mini PCI-E Card to Desktop PCI-E Adapter Converter + PCI-E Low Profile [wireless card is not included] Compact intel 7260 6300 6250 3160 Broadcom Atheros Half Size Wireless Card

This is not the right one even though the link goes to it. Amazon.com runs out of stock quite often. What you need is the Fenvi FV-T919 which should cost in the 50 dollar range. It includes the Wireless BT card with the adapter. For the BluRay drive you'd be better off choosing the LG model in the Buyer's Guide. Not every brand is compatible.

Thanks for the tips. Will look into both of those shortly! I was suspicious of the Fenvi I mentioned... I'm too tired for more research tonight, but will be back on it shortly!
