Thanks. The Maximus X Hero is actually using a different chip for USB 3.1, the ASM2142 chip.
Anyhow, throughout all this frustration I found out the cable was bad which caused the USB2 speeds...
Fixed that, and now the SSD shows up at USB 3.0 speeds (5gb/sec) and running the disk speed test I get around 500 mb/sec read and write. Interestingly, plugging the same drive into a genuine 2017 MBP, it identifies as a USB 3.1 gen 2 device at 10gb/sec. The fun continues...
The ASM2142 and ASM1142 should also have native support in macOS.
I would not worry too much about System Information reporting that it's running at 5GB/s. Apparently System Information incorrectly reports this information.
If you are pushing 500MB/s, I suspect you are getting USB 3.1 gen 2 levels of performance. In the following article, they only managed approx 400MB/s on USB 3.1 gen 1.
