OS Sierra won't boot anymore, restarts after loading bar finishes

I built my hackintosh back in 2016 with 2 separate SSDs (one for Mac and one for Windows). I used both OS's frequently. A couple years ago OSX would not boot and I found a temporary workaround on here (at Clover boot screen -> PCI Devices -> Checked "USB Ownership" and "USB Injection") which worked for a long time as long as I checked these boxes every time I restarted or else Mac OS (Sierra) would not load. I still don't know what checking these boxes does exactly. Eventually one day when I booted Sierra the login screen looked like this:

As I tried to troubleshoot this problem, it only got worse and stopped booting at all. It gets to the apple logo and the loading bar loads (albeit slowly) and when it's done the computer restarts. I ran disk repair on the OS partition on the SSD but it runs into an error and says it can't repair it. I figured I'd just try re-installing OSX as I already have my files backed up, but I only have a Macbook from 2009 which can only run El Capitan. I tried creating a UniBeast USB with El Capitan but for some reason it says I have an "incomplete" version of El Capitan when I choose El Capitan in the installation screen. I don't have access to another Mac so I don't know how I'd create another Unibeast USB. I've searched for other threads on here but have found nothing so far.
