I was thinking about getting a 1TB SSD for my laptop. The question is what's better for Mojave, SATA or Nvme? What are the pros and cons?

NVMe - Faster, more expensive.
SATA - Slower, less expensive.
 
can I buy any NVME m.2 drive and would it work as a second drive used as a storage for FCPX projects? I'm looking for cheap solution. Currently I have EVO 970 pro as a main drive. Works flawlessly but I need a cheap second drive.

Sure. As long as you have unused M.2 slots, you can add another NVMe and use it as storage.
 
SSD Sata about 500MB/s write & read, 1TB for 100 euros
SSD NVMe from 2000MB/s to 3500 MB/s write & read, 512GB for 100 euros
But in use not much difference except if you're doing data server or special tasks
M2 is a socket involving no wire
NVMe heats a lot and may throttles... some high end models own copper or aluminium to cool other don't
