Ok, as others have said on here, after doing a complete reformat & reinstall, I had to completely enable SIP (go in to config.plist and make sure CSRUtil... is set to 0x0). Then I booted into the clean install of High Sierra, downloaded the drivers and installed them.
I don't know if this is related, but for me it gave me an unsigned kext error, it prompted me to go into Settings > General and gave me a little 'Allow' for Nvidia web drivers. I clicked that and allowed it while the install was still moving.
Then, when the install was finished, I changed CSRUtil back to 0x67 (disabled SIP) and booted back in and everything worked perfectly! You know how they say Linux is only free if your time is free? Well they don't have anything on Hackintoshes...
