New Hackintosh(er) - WI-FI & Bluetooth Conundrum!

So the Bluetooth settings dialog say that it's discoverable, but none of my Bluetooth devices can see it. And I did plug it into a working USB 2.0 header. So it seems like USB 3.0 or 2.0 doesn't matter.

then create a custom SSDT for your motherboard's USB ports. It's complicated I know but it's pretty much mandatory for anyone using a Kaby lake based system.
