Need advice on parts before pushing the button

Hi all

I'm brand new to forums and just want to say how awesome and informative this place is. I am a total noob to Mac, I've never owned one but have always pined for one so hoping this build will turn out ok.

Anyway, I'm looking for advice on the parts I'm going to buy. I tried to stick to the buyers guide but some parts are not available in my country

Parts to buy:

• MB: GIGABYTE Z270X-GAMING 7
• CPU: INTEL I7-7700K
• RAM: CRUCIAL BALLISTIX SPORT LT 2400 (2 x 16GB)
• GPU: GIGABYTE GEFORCE GTX 1050Ti OC
• SSD: SAMSUNG 960 EVO 500GB SSD (NVMe) (for MAC OS latest version)
• SSD: SAMSUNG 850 EVO 500GB SSD (SAtA 6) (For Win 10)
• HDD: SEAGATE BARRACUDA 7200 3TB
• PSU: ANTEC NEO ECO 650W
• CPU Cooler: CORSAIR H60 LIQUID CPU COOLER

Purpose:
All out music production PC with dual boot Mac and Windows, each on their own SSD. Gaming is a secondary thing. I know it's overkill but I want longevity from this machine.

I am most worried about the MB and NVMe SSD compatibility. Will Mac OS boot from an NVMe?
