My first Hackintosh - Graphic Designer (Adobe suite), light video editing, moderate gaming

Hi everyone,

So I'm planning on building my first Hackintosh. I have some hardware picked out, but I would greatly appreciate some help with others. Specifically the GPU. I'm a graphic designer, so I'll be heavily using Adobe CC (especially Illustrator, Photoshop, InDesign, and After Effects). I also do some light video editing and would like to play some games. Although, for games, I would most likely just boot into Windows. So here's where I'm at:

CPU: Intel Core i9-9900K 3.6 GHz 8-Core Processor
Cooler: ??? Not against watercooling.
Motherboard: Gigabyte Z390 Designare
Memory: Corsair Vengeance LPX 32GB (2x16GB)
Storage: 2x SAMSUNG 970 EVO M.2 2280 500GB PCIe Gen3. X4, NVMe 1.3
2x SAMSUNG 860 EVO Series 2.5" 1TB
GPU: ??? I was considering a used Radeon VII
PSU: CORSAIR RM650x
WIFI: Fenvi FV-T919

CASE: NZXT H510

Thanks again to anyone that can help me out! Does this look like it would be stable? Work well with what I want to use it for?

I would go with the 970 Pro rather than the EVO just to avoid having to update the firmware (otherwise you will not be able to instal Mac OS on it)
AMD 5700XT will work well with Catalina.
 
Thanks! I did not know that about the EVO.

The 5700 looks like it would be easier to get as well, so I might go that route instead.
