I've added Coda and Yojimbo to my list. In about 1 hour, I loaded up Yojimbo with snippets, images and web links. Glad I broke down and finally purchased it. I'm a sucker for Journaling apps.

Quicksilver, for me at least, is OK. I use Spotlight when I need to launch and search for apps I don't have on my dock. But I have used it on my macbook in the past for some time.

I don't use Quicksilver, as I like to keep OS X as standard as possible- so I'm comfortable sitting down to work at any stock Mac. Dabbled with it and PathFinder, then realized that I live in Steve's world- might as well use Steve's tools. :)

Try Movist.. Better than VLC in my opinion. :)

MPEG Streamclip
Aperture
Audacity
FCS
GIMP
Scribus
Inkscape
Neo Office
iWorks
X Skat
DVD Imager
Celtx
iShowU

Here's some stuff that hasn't been listed yet (I think):

Productivity/Utilites
Alfred (a prettier, better Quicksilver)
Breeze (Window Management)
Dropbox
Fluid (Make web apps into quick 'desktop apps')
Evernote
IceClean and Onyx (System Utilities)
CleanMyMac

Communication
CloudApp (Quick file sharing)
Colloquy (IRC)
Propane (desktop client for Campfire)

Development/Design
Cornerstone (SVN Client)
Coda

Media
Handbrake
jDownloader (downloads queue-style from Rapidshare, MU, etc)
MacHacha (Split/join files)
Steam
Hulu Desktop
ComicBookLover
Kindle for Mac

http://mac.appstorm.net is a great place to find new apps :]

I ditched Quicksilver pretty fast for native Spotlight and dabbled with GQSB, but when I found Alfred, it was all over :] By far the best launcher I've ever used.
