Do I just install everything in multi beast or do I have to pick and choose. I'm not positive on all the hardware I have and I want to know if I can just install everything.

Well, it depends how many files you want to manually remove once it's done installing and how well you want your hackintosh to work...

It really would help if we knew what hardware you had as well, as then it's possible to answer questions with regards to what needs to be installed.

Short answer, no, you don't install everything.
