I assumed based on your reply. I wanted a little more evidence and hence asked for the 2 screen shots to help me figure out the next best step.
Allright thanks for putting in so much effort! Where do I need to make a screenshot of? I will send it tomorrow.

Edit: nevermind I will send then now, I didn't see your previous message.

Please upload to the Forum screen capture images of
  • Apple>AboutThisMac> Overview
  • System Report>Graphics and Displays.
To capture screens :

Press Windows key(CMD) and 4 (not F4) to get a Cross-Hair Cursor
Drag the mouse cursor with left button pressed from the top left corner of screen to Right Lower Corner of screen to capture and let go of the Left mouse button to drop the captured screen on Desktop.
Upload the images

We have to find the right FakeID and ig-platform-id for your Intel HD Graphics to fix that issue.
But first let me see the above two images.
Here you go.

Here you go.
As I suspected your Graphics has no full VRAM.
You have already installed the needed kexts in /L/E and Clover/kexts/Other.
config.plist does not have the right FakeID and ig-platform-id
Unfortunately the different 300 Series motherboards seem to have different Intel HD 630 Graphics even among Coffee lakes CPUs.
If you search the Forum you will see people are struggling with the 300 Series board and Graphics.

Since you had a long day, you may call it quits now.
We can resume later.
I might add something to this post later as an edit as I get some more daylight hours than you from this time on.

Edited:
To upload an EFI as zipped file to try as a replacement for the current EFI inside the SSD. I hope this will fix the Graphics issue. This is a trial . Keep a copy of existing EFI in a safe place (like in a USB) just in case you want to go back to that because this one does not work as hoped. The steps to copy and paste EFI Folder from EFI Partition using Clover Configurator Global as an EFI mounting/config.plist editing tool has been explained in an earlier thread.

Do I need to replace the config.plist from your efi? I will try it tonight.

Replace the ENTIRE EFI folder of Mojave SSD with the uploaded EFI.
It has a new config.plist .

See attachment.
Try editing the Fake ID in Graphics Injector to match Card ID number as 3E928086 instead of 3E918086
Reboot and check VRAM in Graphics and Display and also repeat DPCIManager Status
