How important is the type of RAM you use. I am trying to build a CustoMac mini but have some
Corsair Vengeance LPX 8GB (1x8GB) DDR4 2400MHz CL14 , will this work?

As long as the RAM works with your motherboard then it should work with MacOS if you can install it.
