Maximum number of monitors on this Mac Pro- ?

Hi!

My buddy does futures and stock trading on his old workhorse mac pro, its 2.6 Ghz Early 2009 Mac Pro model, that currently has 3 Nvidia Geforce 7300 Gt video cards.

Since his stuff (looking at Think or Swim Platform and IB trading terminal) is not graphics intensive, he is fine with these low end cards..

He wants to be able to have 21 Monitor on his wall.. I know it sounds crazy but is it achievable? If not, whats the best solution for a maximum number of monitors this computer will support?

There are USB to dual monitor adapters... so a single USB can drive 2 monitors. Check into those.
 
The maximum number of displays is pretty much limited by your video card and any additional adapters. If you're willing to attempt to use a PC video card then the limit is surprisingly high. For example, take this card:

Three of those will get your 15 monitors natively. You'll also have to rig up additional power as that system only has two aux 6-pin PCI-E connectors. Still not a bad start.

With all the powers being DiplayPort, you can get a box like this:

Note that only two 1920 x 1200 resolution monitors are supported but that'll still bring your total to 30 displays. You'll also need mini-DP to full sized DP adapters to use this (which the video card listed above should come with one or two).

There is the possibility of going even higher. MST hubs for DisplayPort would allow for three 1920 x 1200 displays with that video card listed above. That'd bring the total number of monitors to 45. Future video card cards may come with six mini-DP ports that adhere to version 1.2 of the spec. This would allow for a MST hub to support four 1920 x 1200 displays for a grand total of 166 megapixel resolution across 72 monitors.
