No downloadable version 11.6 of Big Sur is yet available on the App Store; current version is 11.5.2.

It should now be available due to "overwhelming feedback".

I saw it on my 2018 Mac mini running Mojave 10.14.6.

Be warned, however, that since Apple seems to treat 11.6 and later versions as "Security Updates", it may no longer provide full installers for them (the norm as previous versions). (11.6 seems to be an "exception".) This means that, due to the lack of standalone updates, you might only be able to update to these future Big Sur security updates by using Software Update only.

My downloaded "Install macOS Big Sur.app" version is 16.8.00, which I'm guessing installs MacOS 11.6. (The version on my flash drive is 16.7.01.)
