Thankfully a NVRAM reset solved my problem and the update showed up for me. I saw further up in the thread that SIP should also be enabled. Hope this helps anyone who runs into this issue
How do you reset NVRAM on opencore?

I confirm, disabling SIP was the only solution worked for me to get 11.2 update.

Not true, I have sip disable and the update show up
This is true, when you got the problem enabling SIP solves the problem in most cases.

If you have SIP disabled and you see the update, no need to find a solution. This is why you think it is not true... because it is working for you with a given system.

I have 4 hacks, two of them needed to have SIP enabled. The other two did not need this.

The updater didn't work!
I had to delete my system partition, and then install a fresh new copy of Big Sur 11.2.
I previously had the same issue with Big Sur 11.1.
So it's painstaking instead of easy.
I gladly would know what the issue is?

Done!
OC Updated to 6.6 and everything working!

OC - updated from Apple Menu - System Preferences - System Update - a few restarts about 15-20 mins. No hitch.

smooth update, OC 6.5, 10 minutes and that's it.
