Is Clover working only from Preboot?
That is normal for Big Sur. The Preboot partition is always used for the normal boot. There is a separate Install Prebooter during the installation though. Not the same one.

Updated without issues, OC 0.6.6

Resetting NVRAM also solved my issues. Easy update.

Updated from Big Sur 11.2.0 right to 11.2.1 without any problems using OC 0.6.5..
1.Downloaded 11.2.1 from Software Update stated 8-mins for a 2.43GB update.
2.Then Preparing MacOS Big Sur took about 15-mins and i selected the restart option.
3.The 1st reboot automatically selected Macintosh HD.
4.The 2nd reboot automatically selected my macOS drive ( Ryzentosh SSD )
5.The 3rd reboot automatically selected Ryzentosh SSD, screen flashed then stated about 10-mins remaining.
6.The 4th reboot booted to my login screen.

Note :Installation created a startup disk labeled ( Macintosh HD )
I let it choose the startup disk automatically.

Fully working Big Sur 11.2.1 macOS on my AMD Ryzen 7 Hackintosh.
Hope this helps : )
Thanks for sharing this. Leaving the updater to default drive/volume to continue the update is very important otherwise update doesn't complete. This should be added to the first post.

I am still on Catalina running OC 0.6.6. Is it advisable to upgrade directly to MacOS 11.2.1 or better go through a blank install?

I can't say for you, but the direct upgrade worked for me, and seems easier. Make a backup!
