To prepare switching to OpenCore, I solved the CFG Lock issue by setup_var, clean the clover setting and DSDT. But finally I stay in clover 5126 with new optimized setting, and update to BigSur.

Success
Had already running Catalina on OpenCore 0.6.1, updated the kexts and rebooted.
Then I updated to OpenCore 0.6.3 and still no problems.
Finally updated to Big Sur with no problems.
Did not have iMessage running on Catalina, so still doesn't work.
I can't find my Denon receiver as normal sound output, but don't know if it is a setting or a bug (was working in Catalina).
It is visible when I open Apple Music.
Fought with a relentless kernel panic for several days. Could not even boot the 11.0.1 installer. Same issue related to IOUSBFAMILY and IOUSBHOSTFAMILY Kexts in the KP backtrace. Two systems, one Ryzen 3700x and the other an Ivy Bridge.
Using OC 0.6.3 all green check marks in the Sanity Checker.
The problem???
Apple A1114 bluetooth module installed in each system. Unplugged one of them and 11.0.1 booted perfectly.
These little modules have been the BT workhorses in my hacks for a decade, but apparently not anymore with Big Sur. Plug one back in and the OS instantly locks up hard. Too bad.
Hopefully this helps someone else in the same situation.
