New method is not complicated.
No support for old method.
The guide works for Lion (In fact, I have a 4530s that works on Snow Leopard -> Sierra, using the same guide files).
RehabMan, I really feel that this guide here: https://www.tonymacx86.com/threads/guide-to-installing-lion-on-hp-probook.77494/ is a lot simpler. Would I run into trouble if I used it? The Clover method seems to use a lot of Terminal commands. I definitely don't want to mess up my Snow Leopard OS because it's been absolutely perfect for 4-5 years.

Your choice, but no support (from me).
You already have my opinion (use Clover hotpatch).
If you want to ignore the advice, that is your decision.

I never did get the Atheros AR5B195 card for a working WIFI on this laptop. Do I need to have working WIFI to use this Clover method or can I use the ethernet port?

If you follow the guide, your AR5B195 will be working.
The guide recommends using the Ethernet port during the post-install process.
