Let's talk about Broadwell's uknown(?) GPU hang/KP issue...

Something is going wrong with your memory information.
Suggestion you focus on that.
I played around with config.plist/SMBIOS/Memory settings and here are the results. I can now confirm that my laptop's mobo is using both RAM sticks in single channel. Strange, ha?

CPU-Z on Windows shows single channel?
I have not reviewed the Clover source for SMBIOS/Trust and SMBIOS/Memory.
Perhaps some conflict there.
You might review the code to understand better how those options affect memory information injected.
Maybe Trust should be false when using SMBIOS/Memory?

Wait. How did you check on CPU-Z? I don't have Windows at all. Is there a way to check it on Ubuntu/other Debian distro?
 
Windows is easy/fast to install.
But I have to swap hard drives to prevent damage to my macOS partitions...Also, the clover preboot.log also shows single channel. What about that?

Windows can be installed on the same device as macOS.
It is covered in my Clover guide.
Or you can install to another device as you mention, your choice.

The log you're referring to is driven by the data you're putting in config.plist.
If you want to know reality, install Windows.

Again, it's a different problem. This video shows the typical DVMT pre-allocated video memory issue which is fixable by changing the DVMT to 64MB or larger or by patching the framebuffer kext to accommodate the 32MB DVMT value.
