Legacy to UEFI

If I installed the Clover legacy bootloader can I just install the UEFI bootloader to overwrite it ?
Or is there more involved to change over ?

It is more involved than just installing both ways.
UEFI mode stores your Clover files in the EFI partition.
Legacy mode stores your Clover files in the /EFI folder in the root of your system partition.
When you install in UEFI mode you must delete the Legacy /EFI folder and contents but remember that all of your current config information is stored in there.
 
You can delete the clover files from wherever you installed them, and erase the boot loader from the MBR of the disk you installed to (something like this should do it)

Then do an EFI Clover install, and add Clover to the EFI boot menu.
