After almost one month, I think I've identified the reason what causing Catalina to reboot suddenly. It was this settings. Whenever I used "Put hard disks to sleep when possible" there was a kernel panic randomly after some times. I'm including the panic report below with clover settings

Also I couldn't successfully use sleep on Catalina. It goes to sleep, but upon resume It awakes for a few seconds, then reboots with a kernel panic.

Edit: So finally I exchanged the optical drive and since then no problem anymore with Catalina. It is definitely a compatibility issue. To those who ran also into this problem and don't want to unplug or exchange their optical drive: simply enable "Prevent computer from sleeping automatically when display is off" and disable "Put hard disks to sleep when possible".

I managed to fix mine by adding and enabling the flag "PowerTimeoutKernelPanic" in OpenCore under Kernel->Quirks .
Thanks to @ben9923 's tip here

Which brand/spec of optical drive did you use?

So this liteon drive does not need the hack?

No it did, I was getting kernel panics so this flag fixed it.
