Does it even matter what stick is used as long as it's USB 2 or 3 and of sufficient size? Is 8GB large enough, or is 16GB necessary?

8 GB is enough. The required size is actually quite a lot smaller, just larger than 4 GB. I don't think USB 2.0 or 3.0 matters, but it might be a good idea to use a USB 2.0 port while installing either way.
