A few things to consider, you don't tell us what kind of keyboard or mouse you are using. USB or Bluetooth probably but it makes a difference. Second you are using a laptop based EFI that has so many kexts and drivers and ACPI SSDTs for a touch pad you will never need and could and probably do conflict or a least confuse your efforts. You also don't tell us anything about what model NUC11 (there are three different kinds not taking CPU types into consideration) or the laptop. What CPU and or chipset is in each? As far as I know you are the first here with an NUC11 so I would not expect much support, I would refer you to the Dortania guide but they do not have any information on Tiger Lake (only ICE Lake) so at this point maybe not a great choice for a Hack.
EDIT: So many things wrong with using that EFI Folder, it calls out to load a USBPort.kext that won't look anything like your devices ports, no USB or Mouse enabled (or any USB port for that matter) using it I bet. Just wrong on so many levels.
I don’t have an NUC11 and documentation for one is nonexistent. It’s going to be about trial and error, you can try following the Dortania Install Guide but I don’t know if comet lake or ice lake would be a better choice because both are different. Other NUC configurations follow desktop guides.first of all thank you for your reply.
The device I am using is "nuc11tnki7" . I know I haven't made any changes to the EFI. What do I need to clean?

maybe faking the cpu but no guarantee that would work that greatIs Intel Iris XE supported - At all? Comet Lake just about but nothing newer ...
