I built a USB install disk with Clover and successfully booted into the Big Sur installer. After formatting my SSD to AFPS (Guild Partition Map), I attempted to install big Sur. I received the message that "The Update Cannot Be Installed on This Computer." I tried changing the SMBIOS various times using MacPro5,1 MacPro6,1 MacPro7.1iMac14,4. Nothing works. I still get the same error message. I also attempted to update a Catalina disk on the same system and received the same error.
I then built the install disk with Opencore. I came to the screen to choose the drive(operating system) that I wanted to boot to. It showed the MoJave drive that I have in the system, but it did not show the Big Sur USB drive that I booted with. Also my USB keyboard was not working at this point. I am new to Opencore.

NVIDIA GeForce GTX 760 4 GB
512 GB SSD
I also attempted the install on a system with the following specs:
Asus P6T Deluxe V2
Intel Xeon x5680 overclocked to 4.07 gHz
24 GB Ram
Radeon RX 570 4 GB
512 GB SSD
This system never boots into the installer. It continues to reboot.
