I currently am running Yosemite 10.10.3 on a Gigabyte GA-Z68XP-UD3 LGA 1155 Intel Z68 HDMI motherboard and probably the original BIOS. In researching clover installations, I noticed that it is for new UEFI motherboards. Do I need to first upgrade the motherboard to UEFI in order to attempt my clover installation? I really don't want to, because this is my primary machine and I bought an extra SSD drive so I can revert back to my current SSD Drive if it doesn't work out.

Your help is greatly appreciated.

Your board supports UEFI. I would always recommend upgrading to the latest BIOS before installation of a new OS, especially if you're going to boot Clover/UEFI. Even if you upgrade the BIOS, you'll still be able to boot legacy to get to your old installation. Try this:

Firstly, create your Clover/UEFI USB disk.
Upgrade BIOS.
Try to boot old OS via Legacy boot on the new BIOS.
If it boots, then go ahead and pull the working legacy OS drive or disable it in the BIOS.
Boot via UEFI boot off the Clover USB and install Yosemite to the new SSD.
