I'm new to this and I have had a HP ProLiant DL320 G5 Server given to me with an Intel Xeon 3070 so I figured I would try and turn it into a mackintosh/ Xserve. First question: Is this possible and is there anything I should know before starting?
 
The thing you'll have to look at with this is the system compatibility to OS X as a whole.
Network, USB, SATA Controllers and the like, need to see what is supported in OS X and what is not.

I myself would set up a Unibeast installer and give it a go and see what I can or cant do with it lol. If you can set up the bios to AHCI for the SATA ports then you stand a good chance of getting somewhere.

Best is to get the specs and see what controllers are what and then see what the best ones in OS X are and go from there.
