High performance mini ITX hackintosh

Hi people!

First time here - so forgive me any rookie mistakes.

I would like to build a mini ITX computer that runs both MacOSX High Sierra and Windows.

The intended purpose is to develop IOS Apps with Unity3d and build and deploy them quickly.
Does anything prevent me from doing that?

If that is possible at all I would like to do the following:
It should go in an NCase M1.
I really want to make sure I have bluetooth + WIFI + USB3.0 working.
I would like to use a NVME ssd + another SATA SSD. Recommendations? Would a Samsung 960 pro work?
GPU should be a recent NVidia GPU like a 1080 or maybe a 1070TI. Is that good to go?

As far as I know the choice of mainboard and CPU is the most important one. I would like to go with at least 6 CPU cores. I like Ryzen but it seems Intel is the more safe route as of now.
What are the known CPU + Mainboard options in the Mini ITX realm that are guaranteed to work?

Is there anything else I need to consider?
