Solved by using boot override in BIOS to cause system to boot from the opencore thumb drive. Then I reformatted the SSD and did a clean install of Catalina 10.15.5. Deleted old Kexts from library on time machine backup (after causing a kernal panic when I tried to use migration assistant to restore from the time machine backup the first time) and used migration assistant to make my new hack old again (in terms of files etc.). Now it boots and runs like a champ. And, I'm thinking of upgrading the processor and motherboard so that I can see how fast it'll go with the radeon vii gpu.
