Help needed - OS X works great but booting is causing issues

Once I get it to boot - which is always successful if I keep trying - Catalina 10.15.4 runs great, no issues. Had it running for a week straight with many hours of heavy load every day. However, the booting into Catalina part is not as smooth. I seem to get stuck more or less immediately after I chose the correct drive in Clover. Sometimes it boots on first try, sometimes it takes up to five tries.

What I have tried:
* Bios - tried various settings like handoff on/off. Wifi/bluetooth on/off. Disabled other Sata drives.
* Clover - tried different versions including the latest. Updated all kexts used in 'Other'
* Pre boot @ Clover - booting -v and -v debug=0x100. Pic below

Attached my EFI without serial.

I have been trying different things like a mad man on a desperate quest. I am super thankful for any help I might get from the forum. Believe me, I have searched and read but I feel stuck at the moment.

These two both do the same job and are mutually exclusive - Use one or the other but not both.

Your kernel panic information has scrolled off the top of the screen.
