Been trying to find a solution to this for 3 days now and cannot find a way to fix this kernel panic

This panic is usually caused by overuse of config.plist/ACPI/Fixes (generally you don't want any initially).

Or by saving DSDT.aml in the wrong format.

Remove FakeSMC sensors... They are not called for by the guide.

If the panic is the same, there is some problem with ACPI. You may need to extract and examine them for potential problems.
