I am considering using the Hackintosh I just built for everyday business use. But was curious as to whether or not it is secure as a real mac which uses Secure Boot and SIP. Any input would be appreciated. Thanks.

With Opencore, SIP can stay enabled.

FileVault should work on a Hackintosh as it does on a Mac. I don't use it myself but you can research this site and Apple.com to find out more about using it.

Turn on the macOS Firewall, it's off by default. Turn on Stealth mode if you won't be networking with other computers. Secure Boot can't be enabled on your Intel motherboard. If you do, then macOS won't boot. There may be some complex workaround for that using OpenCore but it's not worth it in my opinion. The most important thing is probably FileVault if your business data has to be kept private.

However FileVault is very slow on machines without T2 or Mx.

Secure Boot CAN be enabled on intel & Amd hacks

Not so complex anymore. I've done it many times on many hacks.

And is very worth it, as it will protect your PC from executing anything Not signed at boot

For those that need that extra level of security, probably a good idea. Preventing anything from even getting onto your computer that could hijack the boot process is even better.
