Ha! My first instinct was to create a USB install..But when I went to boot it up, I stopped as I figured a bare metal NUC booting the Monterey install would shut down rather quick...but I just tried plugging it in, letting opencore present my boot options and when I selected the USB stick, I got into the install program. I did not move forward (will do that after work tonight). Lesson is sometimes don't overthink things!I had a similar experience with my Ryzen machine. I could run the installer but when it came to the first reboot I could choose Macintosh HD drive it created but then it would just reboot to Big Sur. I ended up creating an install USB drive with Monterey on it and it worked the first time.
