Would this include the i5ryh and do dual monitors work fine?

Assuming you mean a NUC5i5RYH, it should work fine.
It has been a while since I have tested dual monitors, as I am not using my NUC5 in a dual monitor situation.
You should try/test it and see.

@RehabMan: Right, so i followed the guide to the letter i think (I ended up with the 5i5myhe just like you), Bios options are all set as specified

I have come to booting the USB, Clover boots fine.
However, when i hit install it stays on a black screen.

When i select verbose boot i just get a black screen with:

Code:
+++++++++++++++++++++_

Across it and it hangs there.

what could i have done wrong and any ideas how to fix it?

Cheers!

I think that is everything

You did not follow the guide:
- OsxAptioFixDrv-64.efi is missing from Clover/drivers64UEFI

The rest (config.plist, Clover/kexts) looks ok.

Thanks! that appears to have got things going!
I'm past the +++++++++ bits anyway!

I don't think you mention OsxAptioFixDrv-64.efi in your guide though (i did q quick ctrl+f and didnt spot it.)

Seems quite clear:
For Clover UEFI, run the Clover Installer package:
- if using MBR, select the target of the install to "CLOVER EFI" using "Change Install Location"
- if using GPT, select the target of the install to "install_osx" using "Change Install Location"
- select "Customize" (the default is a legacy install -- we need to change it)
- check "Install for UEFI booting only", "Install Clover in the ESP" will automatically select
- check "BGM" from Themes (the config.plist files I provide use this theme)
- check "OsxAptioFixDrv-64" from Drivers64UEFI
- most systems will work without DataHubDxe-64.efi, but some may require it

Note: The bold face highlighting I added just for this quote...

ah!
I do apologise! I totally missed that section.

I do have one more question though if that is ok?
I am unclear with installing clover to the HDD from the other guide.

do I run the PKG installer and install to EFI? or copy the clover file from the USB EFI? (as I missed that section and didnt do any of that section of the guide other than putting that file in you suggested like an absolute ****king spanner?)

Im just unsure of where to actually put it/how to install and make it work!

or should i just re-do USB and do a completely new install?
