Gigabyte Z390 M Gaming build with working NVRAM

What kind of card is it? You may need BlueToolFixup.kext.

Try adding the following kexts:

BrcmFirmwareData.kext
BrcmPatchRAM3.kext
BlueToolFixup.kext

Keep them in that specific order. If you still have problems, try using just BlueToolFixup.kext and disable the other two.

Some days ago I uninstalled windows 10 from my pc but, now when I start OC I have Windows disk on picker. How can I delete it?

I don't know. I've never experienced this. Have you tried formatting the drive where Windows was installed?
 
Is out. Certainly I didn't uninstall it. I took the disk out form my machine

Did you try clearing NVRAM at the OpenCore Boot Picker?

Or try looking for Windows folders in EFI partitions and deleting them?
 
yes, a lot of times, but it is still there
