Fresh Lion install with 16 Gb of RAM from the start?

Most people seem to put in only 4 Gb, install Lion and then put in the other 12 Gb afterwards. Why?

Is it possible to fully load the motherboard with 16 Gb (4 x 4Gb) of RAM and install Lion using UniBeast right from the start?

Not sure about 16GB but I did an install with 8GB installed from the start with no issues.
 
Yes, you should be able to install Lion with 16 GB of RAM installed. I have done so a number of times. In fact, my first hackintosh was in the day of 10.6.2 and I installed that version of Snow Leopard with 16 GB installed using iBoot and a retail Snow Leopard DVD. From what I've read the smaller RAM requirement was in the early days of iBoot.
 
I've done it too with 16Gb on Lion and had no problems whatsoever (apart from the usual HD3000 glitches and some problems with the network).
