First time dual-boot gaming build advice

Hi all,

This is going to be my first hackintosh build, so I'm new around here. My goal is to have a Catalina (fresh install) + Windows 10 dual boot gaming machine.

Proposed build:

CPU: Intel i7 9700K
CPU Cooler: Corsair Hydro Series H60
GPU: MSI Radeon RX 580 ARMOR 8GB
RAM: Ballistix Sport LT 3000 MHz 32GB CL15 (2 x 16GB)
M.2 (dual boot): Samsung 970 EVO 1TB
HDD: Seagate Barracuda 2TB
PSU: Corsair RM650x
Mobo: Asus TUF Z390-PRO Gaming
WiFi/BT: Fenvi T919
Case: Thermaltake Core V21 - M-ATX

A few questions I'm not 100% confident on:
1. This mobo has a wifi and a non-wifi version, is there any upside on buying it with WiFi?
2. Does the S1200A audio chipset work OK with a fresh Catalina install?
3. 650W is sufficient?
4. Should I go Fenvi T919 or go for an M.2 chip?
5. Is it safe to go with the i7 (3.6Ghz) "unlocked" version?
6. There's a big price difference between the MSI RX580 Armor and the Gigabyte Aorus RX580, am I losing out much going for the cheaper?

Does anyone see any potential issues ahead, any mismatch or option to make some better choices?
