Hello to the Forum! And a lot of THX in advance for making Hackintosh possible!

I spend the last 14 days reading different posts of Builds , GPU compatibility, Wifi, sleep/wake etc. to make myself a picture.

Since I will transfer my iMac soon into a Studio and can't or don't want afford another iMac or MacBook for some home finishing stuff, I decided to build my own!
A mini-ITX with little room for expansion (HDDs)! Maybe for a GPU?
Most of the time I will use Logic Pro X, but I also need some capability to use Adobe Pr, Ae, Id, Ps & Ai smoothly and render (Quicktime Lossless, H.264, focus-stacking, panorama-stitching, time-lapses etc., most of time no 3D stuff).
Will this run with uhd 630? If not, I would buy a GPU! Maybe an AMD RX 560, because I've read that they ± work OOB? Recommendations are very welcome!

MB: Gigabyte Z370N WIFI or ASRock Fatal1ty Z370 Gaming-ITX/ac
CPU: i5-8700K or would an i5-8700 be sufficient?
CPU-Cooler: be quiet! Shadow Rock TF 2 (BK003)
SSD: Samsung SSD 960 EVO 250GB, M.2 PCIe
RAM: Crucial Ballistix Sport LT grau DIMM Kit 16GB, DDR4-2400, CL16-16-16
PSU: be quiet! Pure Power 10-CM 600W ATX 2.4
Wifi/BT: Broadcom BCM94352Z
GPU: (optional) AMD RX560 or other recommended!
Monitor: LG Electronics 27UD58P-B, 27"

I would like to run Sierra 10.12.6 over, but if HS 10.13 is a better option for Coffee Lakes, I have no Problem with this?

I have to admit that I am completely new to this field, even building the PC.
