Is it possible to extract/save a copy of Desktop external/internal Hard Drives Icon files in macOS Mojave to be able to later customize them?

Yes, but I suggest you to try Lite icon.
It's free and easier to change volume icons

maybe I did not say it clear enough, I would like to find the original external/internal hard drives macOS icons to create my own custom icons (as in this example: https://www.deviantart.com/supapuch/art/20-HDD-Icons-492014972)

/System/Library/CoreServices/CoreTypes.bundle/Contents/Resources

Found! They are in:
/System/Library/Extensions/IOStorageFamily.kext/Contents/Resources
