Dual Booting Recomendations and Troubleshooting

Hello Community,
I am working on a school computer so I do not want to mess up especially when its not my money. I have built several PC's before and can usually troubleshoot any problem I come across. When it comes to OSX I am a nub. I have been doing my research and I know sorta what range of parts I have access to and stay away from AMD yada yada. I am worried about the install. I want to do a build with a higher end Haswell i5 and two SSD's; one for each OS. I am also going to have a 1TB HDD for files. I hear that you want your OS's on separate drives and I would do thar anyway I dont like this partitioning stuff I only foresee problems. The motherboard I am easy on, I want to find one that works and has USB 3.0 headers on the board. The rest I care less about. I want to know If I Dual Boot OSX Mavericks and Windows 8.1 what will I encounter. I want to know what to install first and other information that will help me out. Another big question I am having is after I install OSX and Windows how do I switch between OS's? Do I have to restart, go into my UEFI Bios and switch my Sata Mode Selection Every Time? And how do I switch OS's? Do I get an option at startup to pick or what? Sorry If I sound nooby or something I just want to suck as much info into my head as possible.

I Have been looking through the threads and searching the web a lot. I just need to know one thing. If i pick my parts from the recommended list of parts. Can I install Mavericks on one SSD and Windows 8.1 on a separate SSD. Can I just change the order of booting every time I boot to change OS?

Yes and yes, but why change the order of booting? Leave order same - OS X drive first. Chimera or Clover, either one, allow you to choose the Windows drive to boot if you want to boot Windows instead of OS X.
 
On a scale of 1-10 how hard is it to install Chimera or Clover? And is it possible not to install either one? just say i want Windows I boot into 1 SSD or if i want OSX Boot into the other?

One is just as easy as the other. Not possible to install neither one as at least one of them is required to boot OS X.
 
I am planning now to just use Uni Beast and Multi Beast and that will install Chimera.

With the Gigabyte Mobo will there be any BIOS settings to be changed or will I have to flash the BIOS or any special things with this build I will need to account for? I am hoping to build install Mac on One SSD and Install Windows and just install drivers and Kexts for each one if needed and go to work. Anything I should Know?

Parts look OK, but sorry, can't help you on the BIOS settings as I have no 9 series board experience, or 8 series either, for that matter - last builds I did were Z77 chip boards.

Oh an another thing. Do I have to disable the UEFI BIOS? Will that render the bios unusable on my board? Or will I get an old style bios that only allows to use keyboard no mouse? It doesn't bother me I just need to know I have to do that.

I also saw that HD4600 Intel graphics are not supported correctly and need some patching. If I am using a GTX 760 do I need to worry? And if so. What do I need to so. I read the thread. But don't really understand.
