Are the Dell Precision T5500s working with Catalina? I've seen a bunch of people run earlier versions of Mac os X on the T5500 but not Catalina and looking for guidance. Looking at building a fully-loaded Dell Precision T5500 with dual Xeons, 72GB of ram, SSD, and an RX580 to use as a Catalina system mainly for 4K streaming, webinars, etc. My 2015 Macbook Pro is getting pegged trying to run everything. While the T5500 is older I'm assuming the dual Xeons and extra ram, (16GB -vs- 72gb) would handle the load.

Well....search is your friend. Found a fully working Catalina install on the T5500. Thanks!

Do you think the T5500 with dual Xeons (E5645 or X5680 6 core 12 threads) and 72GB of memory would be faster than my 2015 Quad-core I7 16GB Macbook Pro? My 4k live stream / webinars, and Adobe Photoshop work is pegging the cpu / memory on my mac book.

Yes, Search is your friend, Install macOS and find out I would suspect the dual Xeons would win you say 6 cores 12 threads but total you have 12 cores 24 threads and you likely have dGPU rather than an iGPU so My guess is that the MacBook will be slower.
