This looks like an old issue that has a fix. However, I think my case here is different. Please read the post.
  • :!: The USB stick is formatted as GPT
  • :!: I'm trying to make a bootable disk for macOS High Sierra
  • :!: The machine I'm using to create the bootable disk has macOS Catalina installed!

:arrow: I have tried the following option as stated in the troubleshooting page from section 19:
sudo diskutil partitionDisk /dev/disk2 GPT JHFS+ USB R

:arrow: I also tried erasing and formatting the USB stick with the Disk Utility app.

But still got no luck. Seeing the same error message, over and over again.
Please help if someone has a fix. Thanks!

I don't think unibeast has catalina support yet
 
Workaround [not fix]:
  1. Made a Mojave installation disk with UniBeast 9.2.0 - Mojave from my (Catalina installed) Macbook pro
  2. Installed Mojave on my computer
  3. Made a High Sierra disk with UniBeast 8.3.2 - High Sierra from my (Mojave installed) computer
  4. Installed High Sierra on my computer
I have the same problem as yours, my system version is 10.15.
Can you tell me where to download the 10.14 Mojave system?
