Computer Freezes Intermittently

Hello,
I'm having an issue where my mouse cursor freezes intermittently (along with any apps) when moving it, which gets really frustrating. For example, when playing a video, once every few seconds, the video freezes along with the cursor, but the audio keeps playing as normal.
I recently replaced my dead i7-4790K CPU (and Z87 motherboard) with a Ryzen 5 3600 (and MSI B450 Gaming Plus Max motherboard) - Catalina 10.15.7, and consequently switched from CLOVER to OpenCore (already did so on my laptop). That's when this issue started.

The mouse works perfectly fine in Windows, and in macOS Recovery. I've tried to plug it into different ports, same issue.

When looking at IORegistryExplorer, the mouse only appears once and continues to appear once when the cursor freezes (rather than appearing multiple times, as if power to the mouse cuts off and disconnects), so the mouse remains connected: likely a software issue.

Activity monitor shows no significant CPU activity, so lag can be ruled out. In fact, it's working fine in macOS Recovery.

Maybe I forgot to remove kexts from the CLOVER era? I already cleared NVRAM, and I included kext lists of /L/E/ and /S/L/E/ in case I forgot to remove any kexts that shouldn't belong there.

The reason I ask is because you state that while video might freeze, audio keeps playing. That does not sound like a system event but rather one connected to graphics. So which GPU you are using is relevant.

GTX 780: It was working fine before I changed my system.

Some model Nvidia GPUs are being deprecated for Big Sur, so perhaps this change has also taken effect in 10.15.7?

The longer Nvidia Kepler cards continue to be used the more the chance some will fall by the wayside as the Apple models that used similar GK chips are no-longer updatable.

RAM has also stayed them same (other than changing from DDR3 to DDR4), and it's not overclocked at the moment.

The graphics card was already working fine in 10.15.7.

Could it be that WhateverGreen is interfering? Where should I look for clues about the cause of the lag?

Does your system have XMP? Have you tried disabling XMP?

Have you tried a clean install of macOS? I see some kexts that are not installed by default by macOS.
