Will either AMD FirePro Graphics or NVidia Quadro Series cards run on a hackintosh?

I believe some will, however your probably better off getting high-end gaming cards like the Radeon 7990 and the GTX 690 or TITAN.

even for a workstation setup? Seeing as the new MacPro will run FirePro I would have thought there is some support for these?

The new Mac pro isn't out yet , so there isn't any support in the os yet . If you are looking at getting a AMD Firepro card i suggest you wait till the new Mac pro comes out . Although quadro 4000 works fine with OSX , but you are probably better of getting a gtx 780 because even though its not meant to be a workstation card it makes up for what it lacks in by providing more cuda cores with a newer architecture for around the same price as a quadro 4000.

thanks looks like I will get a 780 as it seems to be fully supported right out the box in 10.8.4
