So I'm new to this whole clover thing so I apologize for my lack of understanding....

On My USB install drive- I have
install sierra
multi beast and a folder called EFI back ups

Inside of efi backups it has
r3766 and inside of that
2016-11-28 22h49
Then....EFI

And inside of EFI is
Boot
Clover
Clover install log
Extensions

Is this the right structure? Does this look like your folder structure ?

If the UniBeast ran successfully then you don't worry about the bootable USB structure.

Nothing is there to work with EFI-Backups folder. Your clover configuration file will be under /EFI/CLOVER/ folder.

So I made my UNIBEAST and installed clover onto that.....

That's what I was supposed to do right? I didn't understand how it came into play and when/where you were supposed to install it.

If you are using unibeast it will automatically install clover. No need to run clover again.

Nice believe it or not that is helpful information

Regarding your original question about "Clover Folder structure"

the "EFI Backups" folder is created by the Clover installer at the first time it is run, intended to backup the Contents of ESP [EFI System Partition] whenever clover is updated or Config.plist is edited to keep the old copy as a 'back up'

As soon as you create your USB Installer using Unibeast , Clover is automatically installed in that USB and therefore an EFI Backup folder is also created. If you modify your Config plist in the Clover directory a backup of that will be saved in this backup folder. When you run Multibeast it changes the contents of several Folders in the EFI System Partition (ESP) such as CLOVER>config.plist, "kexts>Other", "System Defintions" along with showing what version of Clover Multibeast has installed.

If you later update the Clover to a newer version, the EFI backup will have the Older Version from the ESP stored in EFI Backup. This is my understanding of Clover Folder structure.

A series of images of USB Installer's "EFI folder and its contents" BEFORE and AFTER EFI partition is mounted and edited via Clover Configurator (CC) are uploaded for clarity.
